Salt Marsh Flat Oysters

These naturally flat oysters grow in claire salt ponds. With plenty of space – there are only two to five oysters per square metre – the oysters’ diet is rich in phytoplankton, making them meaty and full of characteristic flavour.

Our Tiger Prawns – raised in claire salt ponds

Beginning in August, the oyster bar offers tiger prawns both at the bar and to take away. Far from their tropical origins, these prawns are raised on the Île de Ré at La Ferme des Baleines in Saint-Clément-des-Baleines.

With a focus on quality over quantity, La Ferme de Baleines releases tiger prawn larvae into their salt ponds, supporting artisanal, low-density production. The tiger prawns have access to abundant natural food sources, giving them firm, yet delicate flesh with a subtle ocean aroma.
