We select our oysters based not only on the season and their inherent sensory qualities, but also on how they are raised – in the open sea or in a claire salt pond – and of course how they are finished.

Special Salt Pond-Finished Oysters

  • Raised in the open sea, finished in salt-pond.
  • Natural Oysters.
  • 100% Ile de Ré.
  • Merroir : Fiers d’Ars then Saint-Clément-des-Baleines.
  • Density : five oysters per square metre.
  • Trait : meaty.
  • Flavour : firm flesh with balanced land-sea flavours.
  • Season : milky from May to August.

Special Grand Cru Lepage 100% Raised in Claire

  • 100% raised in claire (former salt marsh).
  • Natural Oysters.
  • 100% Ile de Ré.
  • Merroir : Saint-Clément-des-Baleines.
  • Density :five oyster per square metre.
  • Traits : N°5 are small and plump, perfect as an apéritif.
  • Flavour : lingers on the palate, delicate minerality and saltiness.
  • Season : milky from May to August.

Clémentine Oysters  – Open Sea

  • Raised in the open sea.
  • Triploid Oysters.
  • 100% Ile de Ré.
  • Merroir : Fiers d’Ars.
  • Flavour: bursts of flavour with a bold salty taste.
  • Season: don’t spawn so never milky.

These oysters aren’t available at the moment.

Natural Salt Marsh Flat Oysters

  • Raised in claire salt ponds (former salt marshes).
  • Natural oysters.
  • 100% Île de Ré.
  • Merroir: Ars en Ré.
  • Density: two to five oysters per square metre.
  • Traits: meaty, full-flavoured.
  • Flavour: With a taste that lingers on the palate, they have a firm flesh with pronounced ocean flavours and a slight bitterness at the end.
  • Season: can be somewhat milky from April to June.

Salt pond-finished Clémentine Select Oysters

  • Raised: in open sea, finished in a claire salt pond.
  • Triploid oysters.
  • 100% from the Île de Ré.

  • Flavour: slightly sweet, balanced, ocean aroma.
  • Season: don’t spawn so never milky
